Black Forest Sugar Plums

1/2 cup almond meal*

1/2 cup dried organic cherries

1/3 cup Green and Black’s Hot Chocolate Drink granules

2 tsp Green and Black’s cocoa powder

2 tsp rum ( or rum flavouring )

1/2 tsp pure almond extract

1 Tbsp heavy cream

Place the almond meal and dried cherries in a food processor and chop on high until the mixture turns to a fine meal. Add the almond extract, rum and heavy cream. Blend until it is completely absorbed into the mixture. It should be a thick shiny paste that has pulled away from the walls of the food processor. If it’s too wet, add a little more almond meal or chocolate granules until it’s the desired consistency. Transfer to a small bowl and chill in the frig for at least an hour. After the mixture has chilled, take a grape sized piece in your hand and roll it into a ball. Place it in a small bowl of hot chocolate granules and roll it around to coat. Set it aside on a plate. Continue making balls and rolling them in the chocolate granules until all the mixture has been used up. Store in an air tight container in the frig. Makes about 30 small treats.

*Almond meal is available from many grocery, bulk food and health food stores. It’s also called ground almonds or almond flour. I find that it varies considerably in it’s moisture content. Ground almonds tend to be drier, so if you use them, you may have to add a few more drops of liquid to the mixture. Personally, I use Bob’s Red Mill Almond Meal/Flour. I keep it in the refrigerator to prevent it from becoming rancid.
