
For a number of years, I just didn’t have a birthday cake. Finally, I orderd one from a gluten free bakery for my sixtieth birthday. I was thrilled to have my very own birthday cake to add to the celebration! It was a real treat that I hadn’t realized I was missing. The entire family tucked in and shared the excitement with me. The cake honestly added a lot to the occasion and I was grateful to have had it. Upon reflection, a few days later, I had to confess that the cake was heavy and dry. In addition, it had been extremely expensive. I began to wonder if I could create something that would look, taste and have the texture of cakes I had eaten long ago… before my gluten free life style. I miss my sweets! I’m not a huge sweet eater, but I do want a small treat after lunch and dinner. It just seems to finish the meal for me. Yesterday, I “settled” for fruit, nuts and yoghurt and while I really enjoy all three, it didn’t seem to solve the problem or satisfy the need. I decided to make some frozen strawberry yoghurt. I have been introduced to two medical videos about gluten sensitivity and Celiac Disease, that I think are critical for everyone to see. The first was posted on the Celiac Disease- not just a food preference Facebook page. The site is a great resource run by dedicated, caring people who are doing a terrific job of keeping everyone informed. It’s well worth a visit. Although it is based in the UK, people from all over the world belong and post resources pertinent to their part of the world. When I shared this site with my sister and a friend, Heather, I was introduced to yet another resource by Heather. Both were so enlightening that I wanted to share them with all of you. The first video is about 40 minutes long and the second is about 50 minutes. I saw them twice …the second time I took notes! I hope you find them as valuable as I did.
